Preparation time - 10 minutes
Cook time - 20 minutues
Ingredients
- 1 large head of cauliflower, leaves removed and cut into 'steak' thickness slices - see picture
- 600ml carton buttermilk (OR whisk 1 egg, 200g sour cream with 250ml of milk)
- 2 cups plain flour (GF option available)
- 1 tablespoon ‘Vegeta’ (vegetable seasoning available in supermarket spice section)
- 1½ tablespoons garlic powder
- pepper and salt, (about ½ teaspoon of each)
- 2 litres cooking oil
Cooking Steps
1
To prepare for deep frying
Begin by pouring cooking oil into a deep frying pan or wok and place on a very high heat.
2
While oil is heating, prepare seasoned flour by combining Vegeta, garlic powder, pepper, salt and flour in a large bowl.
3
Next. pour buttermilk into a separate medium sized bowl. Toss the cauliflower, about 4 pieces at a time, first through the buttermilk, and then into the flour mix, coating thoroughly.
4
Test oil is ready for deep frying by dropping a tiny ball of flour mixed with buttermilk into the oil. If it sizzles, the oil is ready for your coated cauliflower pieces.
5
Taking care not to burn yourself, use tongs gently place about 4 pieces cauliflower 'steaks' at a time. When cauliflower coating is a deep golden brown colour it is ready.
6
Again, using tongs, carefully remove each piece of fried cauliflower, allowing any excess oil to drip back into the frying oil.
Place each piece of cauliflower onto a baking dish, or wire rack, leave uncovered. When all frying is complete, serve.
Tip - Don’t drain on absorbent paper as this will cause the cauliflower steaks to go soggy.
Serve with coleslaw and your favourite mayonnaise or aoili sauce.
