So juicy and tender ... this pastrami recipe is super easy and the starring ingredient to your classic Rueben sandwich (see picture & link below)
Also great with traditional white sauce and veggies and/or sauerkraut.
Prep time - 10 minutes
Cook time - slow cook for 7 hours
Ingredients
2kg piece of corned beef
2 sheets of cooking foil
Spice Rub Ingredients
2 tablespoons ground coriander powder
1½ tablespoons dried mustard (Keens brand is good)
1 tablespoon onion powder
1 tablespoon brown sugar
1 tablespoon smoked paprika
½ teaspoon cloves
2 whole black cardamon pods (available in Indian spice stores)
4 tablespoons coarsley ground peppercorns
Cooking Steps

Preheat oven to 120°c (248°f).

Place black cardamon, peppercorns and cloves in a pestle and mortar and grind until coarse and combined (if you don't have a pestle and mortar - process in a blender).

Next combine all the other 'spice rub' ingredients to the peppercorn, black cardamon & clove mix. Mix to combine.

Roll the corned beef all over rub until the beef is completely covered with the spice rub.

Finally place the corned beef, fat side down onto a sheet of afoil. Seal beef completeley in the foil. Add a second sheet of foil to seal the beef.

Place the sealed beef onto an oven rack so that is resting on the rack.
Next add ⅓ cup water to an ovenproof pan and place pan on the bottom shelf of the oven, underneath the rack holding the sealed beef. This helps keeps the beef moist while cooking.

Cook in a slow oven for 7 hours, topping up the water tray with ⅓ cup water every 1½ hours.

To serve, remove the beef from the oven, allow to stand for 20 minutes, while still in the foil.
Finally, use a sharp knife to cut pastrami in thin slices.
Serving suggestion - use pastrami as the main filling to make a Rueben sandwich, see picture below.

Leftover pastrami can be stored in the fridge in an air tight container, for up to a week ... great for weekday lunches!
