This is great as a dip, on a toasted cheese sandwich, stirred through pasta for a simple meal or as a condiment with meat or vegetables … yum, enjoy !

Ingredients
- ½ cup Sundried tomatoes, marinated in olive oil
- ¼ cup raw almonds, skin on
- ¼ cup grated parmesan, dried or fresh
- 3 cloves garlic, peeled and left whole
- Salt & pepper, to taste
- ½ cup Extra Virgin olive oil, approximately
Cooking Steps

Place all the ingredients in a food processor and blend.

Add more olive oil, and continue to blend until pesto is blended yet has a chunky consistency.
Store in the fridge in a sealed container for at least a couple of weeks.
