Jojo's Kimchi Fried Rice

This Korean classic is easy and delicious ... perfect for an easy weekend meal!

 

Prep time - 10 minutes

Cooking time - 10 minutes

 

Ingredients

  • 4 tablespoons butter
  • 2 large brown onions, peeled and roughly chopped
  • 1½ cup kimchi, store bought
  • 2 tablespoons Gochujang (extra, to taste) **available in Asian section of supermarkets
  • 3 cups of cooked, white rice, (Jasmine or Basmati)
  • 2 tablespoons soy sauce (extra, to taste), GF option
  • 2 tablespoons oyster sauce (extra, to taste), GF option
  • Optional - 6 fried eggs; 1 per person (6) fried in sesame oil and garnished with chilli flakes & seasoned with salt.

Cooking Steps

Melt the butter in a large frypan, add chopped onion and sauté until translucent.

Next add the kimchi, stir through and heat through.

Add Gochujang sauce and cook for a further 30 seconds.

Add the cooked rice and stir through thoroughly.

Finally add the soy and oyster sauces and stir thoroughly.

 

Serving suggestions:

Serve with an egg (1 egg per person) that has been fried in sesame oil and topped with chilli flakes & salt.
