This recipe is a real blast from the past for my family. A great family lunch or pack for a picnic.

Ingredients

  • 1 BBQ chicken, store bought
  • 250g streaky bacon, rind removed & diced
  • 1 cup whole egg mayonnaise, S&W mayo' is good!
  • ½ cup diced shallots (scallions)
  • 2 cups rocket
  • 2 large baguettes
  • salt & pepper, to taste

Cooking Steps

Fry diced bacon in a pan until crispy.

Next, combine cooked bacon, chicken meat that has been removed from BBQ chicken and diced (skin included), mayonnaise and diced shallots.

Finally, use a bread knife to carefully cut each baguette longways.

To assemble, add a layer of rocket along the baguette, then add creamy chicken mix on top, spreading it evenly along the baguette.

To serve, use a bread knife to cut each baguette into 3 to 4 pieces (to allow 1 to 2 pieces for each guest - see pic above).

 

Serve immediately or store in an airtight container and keep refrigerated (or chilled in a picnic basket).

Extra tip: You may wish to add cranberry sauce to your sub' - just lightly spread like butter before adding your filling.
